Perfect Cheesy Frittata


  • 2 tbsp olive oil
  • 1/2 cup chopped golden onion
  • 2 large eggs
  • 1/2 cup egg whites
  • 2 cups raw spinach
  • 1 cup cherry tomatoes, whole
  • 1/4 cup grated parmesan 
  • 1/4 cup part skim mozzarella 
  • Dashes of: garlic powder, oregano, black pepper, salt 


Preheat oven to 450 degrees F. In a large oven-safe skillet, heat olive oil on medium heat. Sauté onions for about 1-2 minutes. Beat eggs and egg whites until well mixed. Pour into skillet. Cook on medium heat for about 5 minutes while tossing in spinach, tomatoes, parmesan, mozzarella, and seasoning. Make sure to distribute ingredients evenly into egg mixture. Place skillet in oven and cook for about 10 minutes, until eggs are solid and fluffy.  

Makes 2 servings, about 350 calories each
